Jack Daniels World Barbeque Championships

After a long night of food, fun, Jack Daniel’s and of course the famous southern hospitality it was an early start to get down to the real business of judging world class barbeque. As all 72 judges arrived and found their seats, the apron signing began. All judges are given an a black apron and a silver sharpie to sign each others aprons, a fun tradition and a great way to introduce yourselves to one another. Then it started, the barbeque tasting marathon, the main event, judging at least 6 samples of lip smacking, finger licking good barbeque in all four KCBS categories. Additionally there were 3 more categories of cooks choice, sauce and to really tip us over the edge into a food coma, desert!

finally made it home from Lynchburg, Tennessee last night, home of course to the Jack Daniel’s Distillery and the reason I was there, Jack Daniel’s World Invitational Championships. I have to admit I did not want to leave and I now know the true meaning of ’southern hospitality’. I was invited to ‘the Jack’ to judge all seven categories in the competition, yes seven! But before the tasting all that barbeque, I needed to become certified as a Kansas City Barbeque Society  judge. My class took place on Friday morning,  with over sixty other eager participants. We were instructed on the ins and outs of the Kansas City Barbeque Society rules and regulations, from scoring structures to disqualifications. We were even warned not to eat too much too soon. Our handbook states that if you  ate all one ounce tasting portions in all four KSBS basic contest categories (chicken, pork shoulder, pork ribs, beef brisket) you will consume close to two pounds of succulent, juicy, barbeque and that’s not even including the other categories like sauce, dessert and cook’s choice! The meat isjudged on three different factors, appearance, taste and tenderness and there were definitely a few red herrings thrown in there. Some boxes were garnished with red tipped lettuce, this is illegal, only green leaf lettuce, parsley and cilantro are allowed, other entries only had five pieces, this is illegal also as there must be at least six individual pieces, one for each judge at the table to sample.
