1 arctic char or other medium sized whole round fish, guts removed

 


1. Cut off the fins on either side of the fish with a sharp knife and remove dorsal fin
2. Open the belly cavity of the fish and run knife along each side of the spine
3. Cut off spine bone at the point where it connects to the tail
4. Cut spine bone at the point where it connects to the head
5. Lay fish flat on the board, take knife and remove rib bones on either side
6. Remove pin bones with fish pliers
