Chop all vegetables into fine dice, season and mix with lime juice and chopped cilantro.

Pre heat grill to medium high heat
Place fish in medium sized dish, whisk the oil, spices and lime juice together, let fish marinate for 15- 20 minutes
Remove fish from marinade and place onto hot grill, grill fish for 4 minutes on first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork
Place tortillas on the grill for 20 seconds; divide the fish among the tortillas and garnish with salsa, crumbled queso fresca and sour cream.
Serve immediately
