3/4 cup flour
1/2 cup cornmeal
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
3 tbsp melted butter
1 egg
1/2 cup of milk
1 cup roasted corn
2 green onions, finely chopped
1/2 jalapeno, finely chopped
1/2 cup feta cheese, crumbled
1 tbsp olive oil (for greasing)
1 tbsp butter (for greasing)

 


1. Preheat oven to 400˚F
2. Combine the flour, cornmeal, sugar, baking powder and salt in a large bowl
3. Add melted butter and eggs and mix together
4. Add feta, corn, jalapenos and milk, mix together
5. Pre heat cast iron skillets in oven, brush with oil and butter
6. Divide batter between 2 cast iron skillets and place in oven
7. Place in oven for 25 minutes
8. Remove from oven and let cool for 5 minutes before serving
